Salmon fish sticks



Hello all! Just got back from an amazing weekend in Vegas and when in America, you'll find fried foods left right and centre.  This was the inspiration for my next recipe (but a homemade version that is a tad bit healthier!)  The salmon stays moist inside and cooks relatively quickly.  Great as a snack but we eat it as a meal :)

Ingredients:
- 2 eggs, beaten in a bowl
- 2 fillets of boneless salmon cut into strips
- grapeseed oil (amount depends on the size of your pan)
- 1.5 cups of all purpose flour
- 1 tsp paprika
- 1 tsp cayenne pepper
- 1/2 tsp Italian season
- 1 tsp black pepper
- 1 tsp sea salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder


Directions:
1. Prepare the eggs in a bowl and cut up the salmon into strips


2. In a separate bowl, combine all of the dry ingredients


 3. Coat each salmon stick with flour mixture, then the beaten eggs, then the flour mixture again


4. Heat up your pot for frying!!  Instead of using vegetable oil, I use grapeseed oil.  It definately fries better than olive oil and this is the best alternative that I have :)


5. Check if the oil is hot enough by dipping a dry chopstick into the pot of oil.  If bubbles form at the base, the oil is hot enough for frying.

6. Place the salmon sticks into the oil pot.  It will bubble (just like on TV!) and let it cook for about 2-5 mins on each side until the outer skin is golden brown.  Make sure you make the salmon sticks in batches unless you have a huge pot!




 7. VOILA! Salmon sticks! This is a light battered version so be sure to have your favourite dipping sauce (like honey mustard, ketchup, hot sauce, Maggie sauce, and/or BBQ sauce) on hand for this yummy dish!
